LEMON CHICKEN THIGHS WITH THYME

Serves 2-3

Ingredients:

  • 6 -7 chicken thighs
  • 3 tablespoon olive oil
  • 1 tablespoon raw honey
  • freshly ground Terramezzo Black Pepper
  • freshly ground Terramezzo Lemon Salt ( approx 1 teaspoon) juice of one lemon
  • 1 unwaxed lemon, sliced
  • 1/2 head of garlic, separated into unpeeled cloves
  • springs of thyme

Instructions:
Preheat the oven to 200°C

In a generous-sized bowl, combine the olive oil, honey, and lemon juice. Sprinkle the chicken pieces with freshly ground Terramezzo Black Pepper and Lemon Salt, then add them to the bowl. Use your hands to gently massage the marinade into the chicken, ensuring each piece is coated.
Transfer the chicken to a roasting tray, then toss in the garlic cloves, lemon slices, and thyme. Mix everything thoroughly, making sure it's evenly coated. Season with additional salt and pepper if desired.
Roast in a preheated oven for 45-50 minutes, or until the chicken is beautifully golden and the lemons have begun to caramelize. Serve straight from the roasting tray, garnished with fresh thyme and accompanied by a bed of vibrant green leaves.
