STRAWBERRY SALMON SALAD
Serves 2
Ingredients:
- 300g skinless salmon fillet
- 10-12 strawberries cut in half
- 100g mixed salad leaves
- micro greens of your choice or fresh chopped chives
For the dressing:
- 4 tablespoon Terramezzo extra virgin olive oil Juice of 1/2 lemon
- 1 teaspoon Dijon mustard
- 1/2 teaspoon raw runny honey
Instructions:
Preheat a dry, non-stick frying pan over high heat. Add the salmon fillets and cook for 2-3 minutes on each side until they develop a golden crust. Reduce the heat to medium and continue cooking for another 2-3 minutes until the salmon is cooked through. The salmon should naturally release enough oil to cook itself. Remove from the heat and set aside.
Using two forks, flake the salmon into smaller pieces.
In a separate bowl, whisk together the ingredients for the dressing until well combined. Set aside.
Arrange the mixed salad and strawberries on a plate and place the salmon fillet pieces on top.
Drizzle the prepared vinaigrette over the salad and salmon, then garnish with micro greens before serving.
